If you love tomatoes as much as I do, then you have to give this a go. There are some seriously complicated and time consuming recipes out there for tomato consommé. This one shortcuts all of that yet still packs a flavour punch.
Ingredients:
– 3kg Plum tomatoes
– 175ml White wine
– 2 x Banana shallots
– 3 x Garlic cloves
– 750ml Tomato juice
– 2tsp Salt
– 2 tsp Sugar

Large muslin sheet
Method:
Step 1 – The slice
Quarter all the tomatoes and place into a large pan. Peel and finely chop the shallots then peel and finely slice the garlic. Add both to the pan.
Step 2 – The mix
Add all the remaining ingredients to the pan and then give a good mix.
Step 3 – The simmer
Bring the pan to the boil and once boiling, turn down to the lowest simmer you can get. Simmer the pan half covered for 2 hours.
Step 4 – The pour
Line a large colander with muslin over a large bowl. Using a ladle, gently spoon the tomato mixture into the colander. Don’t rush this and be gentle. Once all the tomatoes and liquid are in the colander, let is slowly pass through the cloth into the bowl. Don’t squeeze or push the tomatoes or you will end up with a cloudy consommé.
Step 5 – The serve
Once the consommé has drained through either reserve for later or heat through and serve.
