Slow Cooked Chicken With Soy, Ginger & Honey

I love my slow cooker for midweek meals.  It makes life so much easier and means when you get home from work you don’t have to spend ages preparing dinner.  Not only does it make meals super easy but they are also super tasty.  Its a win win 🙂

Ingredients:
– 8 x Chicken thighs (boneless & skinless)
– 1 x Red onion
– 2 x Garlic cloves
– 3cm Ginger
– 100ml Dark soy sauce
– 50ml Cider vinegar
– 1 tbsp Honey
– Chicken stock cube
– 1 x Fresh Bay leaf

Special Equipment:
Slow cooker

Serves – 4

Method:

Step 1 – The prep
Peel and finely slice the onion and garlic. Peel the ginger and slice into thin strips.

Step 2 – The pot
Place the onions, garlic and ginger in the slow cooker. Add all the remaining ingredients. Pour in enough water to half cover the ingredients. Give everything a good stir

Step 3 – The cook
Place the lid on the slow cooker and turn on to low. Cook for 7-9 hours.

Step 4 – The serve
Check for seasoning and enjoy with rice and green vegetables.
