Amazing Hummus

I love chickpeas and I love hummus.  It’s such a delicious and healthy food and it’s a blank canvas.  You can put so many different flavours in to pimp it up.  This recipe is for a standard hummus and it’s easily my favourite.


– 250g Dried chickpeas
– 1 tsp Bicarbonate of soda
– 250g Tahini
– 4 tbsp Lemon juice
– 4 x Garlic cloves
– 100ml Ice cold water
– 1 tsp Salt

Special equipment:
Food processor


Step 1 – The soak
The day before you want to make the hummus you need to soak the chickpeas in a large bowl of water and leave overnight.


Step 2 – The cook
Drain the chickpeas and place in a medium saucepan along with the bicarbonate of soda. Cook the chickpeas on a medium high heat for 5 minutes, stiffing constantly. Don’t worry if things catch a little bit but keep stirring all the time. Add 1.5 litres of water and simmer for around 30 minutes. Remove and drain once they are soft enough to easily press between your fingers.

Step 3 – The blitz
Drain the chickpeas and place in a food processor. Blitz to form a stiff paste. Add the lemon, tahini, garlic and salt and blitz again. then with the processor running, slowly add the ice cold water until you get a smooth creamy hummus.

Step 4 – The rest
Place the hummus in a bowl and cover with clingfilm. Let rest for around an hour before serving.
