Proper Tasty Cauliflower Rice

Ok, so everyone knows cauliflower rice.  But I’ll be honest, as cool as it is – and it is cool, I find it pretty meh and bland.  That is until I realised how easy it is to pimp up.  I’m probably the last person to figure this out but just incase, here is a little tip to take your cauliflower rice from ‘meh’ to ‘bloody hell that’s actually delicious!’

Ingredients:
– 1 x Cauliflower
– 1 tbsp Cumin seeds
– Handful of fresh coriander
– 1/2 tsp Salt

Special Equipement:
Food processor

Serves – 4

Method:

Step 1 – The blitz
Remove the outer leaves and core from the cauliflower and chop the florets into pieces and then place in a food processor. Pulse the cauliflower until it resembles rice grains.

Step 2 – The nuke
Place the cauliflower into a microwaveable bowl and cover with clingfilm (no need to add water). Microwave on full power for 7 minutes.

Step 3 – The toast
While the cauliflower is cooking, place the cumin seeds into a small pan over a medium heat and gently toast the seeds. Finely chop the coriander.

Step 4 – The serve
When the cauliflower is cooked, stir in the salt, cumin and coriander. Serve with whatever you fancy.
