Chocolate fix time. This chocolate mousse cake is super chocolatey while still being lovely and light. Definitely in the naughty but nice category!
Ingredients:
– 60g Caster sugar
– 300g Dark chocolate (70%)
– 150g Butter
– 6 x Eggs, separated
– Icing sugar for dusting
– Fruit to garnish (optional)
Special Equipment:
Food processor (optional but handy)
20cm Springform tin
Method:
Step 1 – The prep
Butter and line the springform tin
Step 2 – The melt
Set a bowl over a pan of simmering water (don’t let the bowl touch the water!) and melt the chocolate and butter together. Stir until well combined. Remove from the heat and allow to cool.
Step 3 – The whisk
In a separate bowl, whisk the egg yolks and sugar together until pale and thick.
Step 4 – The whisk (again!)
In a clean bowl, whisk the egg whites until they are stiff peaks
Step 5 – The mix
Add the chocolate mixture to the egg yolks and stir to fully combine. Carefully fold the egg whites into the chocolate mix until fully combined being careful not to lose the air from the egg whites. Pour the mixture into the lightly buttered tin.
Step 6 – The bake
Bake in an oven at 200 for 20mins until just cooked. Take out of the oven and allow to cool before removing from the tin
Step 7 – The serve
Dust with icing sugar and serve with fresh fruit of your choice. Strawberries or raspberries work really well.
