Super Fast Sausage & Lentils

This dish is a revelation! ย Seriously fast dinner that is perfect for a midweek treat. ย Total cook time on this is 15 minutes. ย Amazing. ๐Ÿ˜„

(P.S. Sorry about the shadows – you can see I’m no photographer!)

Ingredients:
– 2 Tbsp Rapeseed oil
– 8 x Sausages of your choice
– 200g Green lentils
– 2 x Banana Shallots
– 1 x Carrot
– 1 x Leek
– 2 x Garlic cloves
– Few sprigs of fresh thyme
– Few sprigs of fresh rosemary
– Zest of 1 lemon
– Glass of red wine (optional)
– 300ml Chicken stock
– Salt & Pepper

Special Equipment:
Pressure cooker

Serves 3-4 depending on how hungry you are!

Method:

Step 1 – The chop
Finely chop the shallots, carrot and leek and set to one side. ย Then finely chop the garlic, rosemary and thyme leaves and place in a separate bowl along with the lemon zest.

Step 2– The brown
Heat 1 Tbsp of the oil in the pressure cooker over a high heat and thoroughly brown the sausages on all sides then remove from the pan.

Step 3 – The sweat
Add the ย remaining oil to the pan along with the shallots, carrot and leek. ย Fry continuously until they have softened. ย Once soft, and if using, add in the glass of red wine and reduce down by at least half.

Step 4 – The pressure
Once reduced, add in the lentils, garlic, herbs, lemon zest, chicken stock and a good grind of salt and peeper. ย Place the lid on your pressure cooker and bring to high pressure. ย Once at pressure, cook for 7 minutes – you may need to turn the heat down a bit at this stage.

Step 5 – The calm
After 7 minutes turn off the heat and allow the pressure to come down naturally. ย Do not quick release the pressure. ย Whilst this is happening it is the perfect time to cook whatever greens you fancy to go with it. ย I chose kale.

Step 6 – The serve
When the pressure has gone down, remove the lid and serve up a wonderful hearty hug of a dinner.
