Super Fast Sausage & Lentils


This dish is a revelation!  Seriously fast dinner that is perfect for a midweek treat.  Total cook time on this is 15 minutes.  Amazing. 😄

– 2 Tbsp Rapeseed oil
– 8 x Sausages of your choice
– 200g Green lentils
– 2 x Banana Shallots
– 1 x Carrot
– 1 x Leek
– 2 x Garlic cloves
– Few sprigs of fresh thyme
– Few sprigs of fresh rosemary
– Zest of 1 lemon
– Glass of red wine (optional)
– 300ml Chicken stock
– Salt & Pepper

Special Equipment:
Pressure cooker

Serves 3-4 depending on how hungry you are!


Step 1 – The chop
Finely chop the shallots, carrot and leek and set to one side.  Then finely chop the garlic, rosemary and thyme leaves and place in a separate bowl along with the lemon zest.

Step 2– The brown
Heat 1 Tbsp of the oil in the pressure cooker over a high heat and thoroughly brown the sausages on all sides then remove from the pan.

Step 3 – The sweat
Add the  remaining oil to the pan along with the shallots, carrot and leek.  Fry continuously until they have softened.  Once soft, and if using, add in the glass of red wine and reduce down by at least half.

Step 4 – The pressure
Once reduced, add in the lentils, garlic, herbs, lemon zest, chicken stock and a good grind of salt and peeper.  Place the lid on your pressure cooker and bring to high pressure.  Once at pressure, cook for 7 minutes – you may need to turn the heat down a bit at this stage.

Step 5 – The calm
After 7 minutes turn off the heat and allow the pressure to come down naturally.  Do not quick release the pressure.  Whilst this is happening it is the perfect time to cook whatever greens you fancy to go with it.  I chose kale.

Step 6 – The serve
When the pressure has gone down, remove the lid and serve up a wonderful hearty hug of a dinner.
