Chocolate Tiramisu Cake

This is an amazingly delicious cake that is lighter than you think and the impressive to effort ratio is definitely in your favour! 🙂

Here is my recipe for this delicious cake.  Give it a go, I’d love to know what you think.


– 30g Butter, plus extra for greasing
– 4 x Eggs
– 140g Caster sugar
– 1tsp Vanilla extract
– 100g Plain flour
– 25g Cocoa

– 1tbsp Demerara sugar
– 75ml Espresso, hot
– 4 x Egg yolks
– 75g Caster sugar
– 125ml Marsala wine
– 500g Mascarpone
– 100g Dark chocolate, grated

Special Equipment
Food processor
2 x 20cm Sandwich tins


Step 1 – The cake batter
Line the 2 sandwich tins.  Melt the butter and set aside.  Put the eggs, sugar and vanilla into a large bowl and whisk until the mixture is pale and has trebled.  This takes around 10mins.  Sift the flour, cocoa, baking powder and a pinch of salt over the egg mixture and gently fold together.  Pour in the melted butter and gently combine.

Step 2 –  The bake
Divide the batter between the 2 sandwich tins and bake for 12 mins until just cooked.Allow them to cool in the tins and then remove to a wire rack to cool completely.

Step 3 – The filling
Mix the demerara sugar into the coffee and set aside.  Put the egg yolks, sugar and masala into a large bowl and place this over a pan of simmering water.  Whisk continuously for 15-20 mins until the mixture is really thick.  It has to be really thick otherwise the filling will not stay in the cake.  Allow to cool, whisking from time to time.  Beat the mascarpone until smooth then fold into the egg mixture.

Step 4 – The build
Grate the dark chocolate.  Slice the 2 cake bases horizontally in half.  Place one layer of sponge into the bottom of a springform tin.  Brush with syrup and then spoon over 3tbsp of filling.  Top with some grated chocolate and then repeat for all layers leaving just sponge at the top.  Cover and place in the fridge along with the leftover mascarpone mixture for at least 2 hours.

Step 5 – The serve
Remove the cake from the tin and then spread a last layer of mascarpone mixture across the top.  Sprinkle over the remaining chocolate and serve.
